Rinse the chicken feet under cold running water
Trim off any visible dirt or debris
Cut off the nails/claws with kitchen shears or a sharp knife
Remove the outer yellow skin if needed
Scrub the feet well with salt or flour
Rinse thoroughly again
Blanch the feet in boiling water for a few minutes
Transfer them to ice water
Peel off any remaining tough skin or membranes
Pat the feet dry with paper towels
Trim any loose edges before cooking
