Gather a cutting board, sharp chef’s knife, and a cutting towel
Wash the pineapple and pat dry
Trim off the top (crown) and the bottom
Stand the pineapple upright on the bottom cut
Slice off the skin in strips from top to bottom, following the curve
Remove remaining “eyes” by trimming shallow V-shaped cuts
Cut the pineapple into quarters lengthwise
Remove the tough core by cutting out the triangular section from each quarter
Slice or dice the pineapple into desired sizes
