Start with unsweetened cocoa beans or cocoa nibs
Roast the beans or nibs lightly if needed
Remove the shells from the roasted beans
Grind the cocoa nibs into a thick cocoa liquor
Press out most of the cocoa butter
Dry the remaining cocoa solids
Grind the dried solids into a fine powder
Sift the powder to remove any lumps
Mix the cocoa powder with sugar and a pinch of salt for hot chocolate
Store in an airtight container
