Wash the summer squash thoroughly
Trim off the ends
Slice, dice, or shred as needed
Remove seeds if they are large
Leave the skin on unless it is tough
Salt lightly if desired and let sit briefly
Pat dry before cooking
Sauté in oil or butter
Roast in the oven
Steam until tender
Grill in slices
Bake in casseroles or breads
Add to soups, stir-fries, or salads
