Wash bhindi (okra) and dry it completely
Trim the ends and slice it as needed
Heat oil in a pan
Add cumin seeds and let them splutter
Add chopped onions and sauté until golden
Add ginger-garlic paste and cook briefly
Add chopped tomatoes and cook until soft
Add turmeric, red chili powder, coriander powder, and salt
Add the bhindi and mix gently
Cook on low to medium heat, stirring occasionally
Add amchur powder or garam masala if desired
Cook until the bhindi is tender and not sticky
Serve hot
