Preheat the oven to 425°F (220°C)
Wash and dry the baby potatoes
Cut larger potatoes in half if needed
Place potatoes in a bowl
Add olive oil, salt, and black pepper
Toss to coat evenly
Spread potatoes on a baking sheet in a single layer
Roast for 20 to 30 minutes
Flip halfway through cooking
Cook until golden and fork-tender
Remove from oven and serve immediately
