Rinse the dried butter beans and remove any debris or damaged beans
Soak the beans in plenty of water for 8 to 12 hours or overnight
Drain and rinse the soaked beans
Place the beans in a large pot and cover with fresh water by 2 to 3 inches
Add salt only after the beans are tender, if desired
Bring to a boil over medium-high heat
Reduce to a gentle simmer
Skim off any foam that rises to the surface
Cook until tender, about 45 to 90 minutes depending on age and size
Add more hot water as needed to keep the beans covered
Test for doneness by tasting a bean for softness
Drain the beans when cooked, or keep them in their cooking liquid for serving or storage
Season and use as desired in soups, stews, salads, or side dishes
