Peel and boil potatoes until fork-tender
Drain the potatoes well
Mash the potatoes until smooth
Mix in salt, pepper, butter, and any desired seasonings
Add flour or cornstarch to help bind the mixture
Let the mixture cool slightly
Shape the mixture into log shapes
Place the logs on a parchment-lined baking sheet
Brush or spray the logs with oil
Bake for 20 to 30 minutes, turning halfway through
Bake until golden and crisp on the outside
Serve hot
