Pat the beef chuck roast steak dry
Season both sides with salt and black pepper
Optional: add garlic powder, onion powder, paprika, or rosemary
Let the steak sit at room temperature for 20 to 30 minutes
Heat a heavy skillet or cast-iron pan over medium-high heat
Add a small amount of oil with a high smoke point
Sear the steak for 3 to 5 minutes per side
Reduce heat to medium-low
Add butter, garlic, and herbs if desired
Spoon the melted butter over the steak while cooking
Cook until the internal temperature reaches your preferred doneness
Remove the steak from the pan
Rest the steak for 5 to 10 minutes
Slice against the grain
Serve immediately
