Pat the chuck steak dry
Season both sides with salt and pepper
Let it sit at room temperature for 20 to 30 minutes
Heat a heavy skillet or grill over medium-high to high heat
Add a little oil to the pan if using a skillet
Sear the steak for 3 to 5 minutes per side
Lower the heat to medium or move to indirect heat
Cook until the internal temperature reaches your desired doneness
For medium-rare, aim for 130 to 135°F
For medium, aim for 140 to 145°F
For well-done, aim for 160°F or higher
Remove the steak from the heat
Let it rest for 5 to 10 minutes
Slice against the grain
Serve immediately
