Pat the tuna dry with paper towels
Season lightly with salt and pepper
Heat a skillet or grill over high heat
Add a small amount of oil
Sear the tuna for 1 to 2 minutes per side for rare
Cook 2 to 3 minutes per side for medium-rare
Cook longer only if you want it more done
Remove from heat and let it rest briefly
Slice against the grain
Serve immediately
