Wash your hands and clean a sharp knife
Choose a mature outer leaf near the base of the plant
Cut the leaf close to the stem at an angle
Let the yellow sap drain out for a few minutes
Rinse the leaf under cool water
Trim off the spiky edges on both sides
Slice the leaf lengthwise to open it
Separate the clear gel from the green skin with a spoon or knife
Cut the gel into pieces if needed
Store the gel in a clean airtight container in the refrigerator
