Harvest when heads are firm and leaves are full-sized
Use a clean knife or garden shears
Cut the whole plant at the base, just above the soil line
Harvest outer leaves first if you want a cut-and-come-again crop
Leave the inner growing point intact for continued regrowth
Pick in the morning for the crispest leaves
Rinse and cool the lettuce immediately after harvesting
Remove any damaged or yellow leaves before storing
