Use unsalted butter
Cut butter into small pieces for faster, even melting
Heat butter in a light-colored saucepan over medium heat
Stir occasionally
Continue heating until the butter turns golden brown and smells nutty
Watch closely to prevent burning (it can go from brown to burnt quickly)
Remove from heat
If using immediately, pour into a heatproof bowl to stop cooking
If you want to remove solids, strain through a fine-mesh sieve
Use brown butter right away or let it cool and store in an airtight container in the fridge
