Heat oil in a large pot over medium heat
Add chopped onions and cook until softened
Add minced garlic and cook briefly
Add chicken pieces and brown on all sides
Stir in salt, black pepper, paprika, and thyme
Add chopped carrots, potatoes, and celery
Pour in chicken broth or water
Add bay leaf if desired
Bring to a boil
Reduce heat to low and cover
Simmer until chicken is cooked and vegetables are tender
Remove chicken, shred if needed, and return to the pot
Stir in peas or other vegetables if desired
Adjust seasoning to taste
Simmer a few more minutes
Serve hot
