Pat chicken pieces dry
Season the chicken with salt and pepper
Set up three bowls: flour, beaten eggs, and seasoned breadcrumbs or crushed cornflakes
Mix paprika, garlic powder, onion powder, and optional cayenne into the coating
Dredge each chicken piece in flour
Dip the chicken in the beaten eggs
Coat the chicken in the breadcrumb mixture
Place the coated chicken on the wire rack
Spray the chicken lightly with cooking oil
Bake for 35 to 45 minutes, depending on the size of the pieces
Flip the chicken halfway through baking
Bake until the coating is golden and the internal temperature reaches 165°F
Let the chicken rest for a few minutes before serving
