Pound chicken breasts to even thickness
Season chicken with salt and pepper
Set up three bowls: flour, beaten eggs, and a mix of grated Parmesan, breadcrumbs, garlic powder, and Italian seasoning
Dredge each chicken breast in flour
Dip into beaten eggs
Coat thoroughly in the Parmesan breadcrumb mixture
Press coating onto chicken to help it stick
Heat oil or butter in a skillet over medium heat
Cook chicken until golden brown on both sides
Transfer to a baking dish if needed
Bake at 400°F until chicken is cooked through
Rest for a few minutes before serving
