4 cups finely chopped cucumbers
1 cup finely chopped onion
1/4 cup pickling salt
2 cups ice water
2 cups white vinegar
1 1/2 cups sugar
1 tablespoon mustard seeds
1 tablespoon celery seeds
1 teaspoon turmeric
1/2 teaspoon ground black pepper
Combine cucumbers, onion, salt, and ice water
Let stand 2 to 3 hours
Drain well and rinse with cold water
Squeeze out excess moisture
Combine vinegar, sugar, mustard seeds, celery seeds, turmeric, and black pepper in a pot
Bring to a boil
Add cucumber mixture
Simmer 10 to 15 minutes
Ladle into sterilized jars
Seal and process in a water bath if desired
Cool completely before storing
