Preheat oven to 325°F
Grease a muffin tin or silicone egg bite mold
Whisk eggs, milk, salt, and pepper in a bowl
Add shredded cheese and desired mix-ins
Pour mixture into cups, filling about 3/4 full
Place the muffin tin in a larger baking pan
Add hot water to the larger pan for a water bath
Bake for 20 to 25 minutes
Check for set centers
Remove from oven and let cool slightly
Remove egg bites from the mold or tin
Serve warm
