Crack 2 to 4 eggs into a bowl
Add a pinch of salt and pepper
Whisk until well combined
Heat a nonstick skillet over medium-low heat
Add a small amount of butter or oil
Pour the eggs into the skillet
Let the eggs sit for a few seconds
Gently stir with a spatula, pushing eggs from the edges toward the center
When the eggs are mostly set, add shredded cheese
Continue stirring until the cheese melts and the eggs are softly cooked
Remove from heat
Serve immediately
