Drain and rinse 1 can (15 oz / 425 g) chickpeas
Add chickpeas to a blender or food processor
Add 1/4 cup (60 ml) tahini
Add 2–4 tbsp fresh lemon juice
Add 1–2 cloves garlic (or 1 tsp garlic powder)
Add 1/2 tsp ground cumin
Add 1/2 tsp salt (adjust to taste)
Add 2–4 tbsp ice-cold water (as needed for smoothness)
Blend until very smooth, scraping down the sides as needed
Taste and adjust: more lemon for tang, salt for seasoning, water for texture
Serve with a drizzle of olive oil and a pinch of paprika (optional)
