Rinse 1 pound dried red beans
Soak beans overnight in water, or use a quick-soak method
Drain and rinse the beans
Heat 2 tablespoons oil in a large pot
Add 1 chopped onion, 1 chopped bell pepper, and 2 chopped celery stalks
Cook until softened
Add 3 minced garlic cloves
Stir in 1 teaspoon thyme, 1 teaspoon paprika, 1 bay leaf, salt, and black pepper
Add the beans and 6 to 8 cups water or broth
Bring to a boil
Reduce heat and simmer until beans are tender, about 1.5 to 2 hours
Stir occasionally and add more liquid if needed
Mash some of the beans in the pot for a creamier texture
Add sliced smoked sausage or ham if desired
Simmer 10 to 15 minutes more
Cook 2 cups rice separately
Serve the beans over the rice
Garnish with chopped green onions if desired
