Preheat oven to 425°F
Pat chicken breasts dry
Trim any excess fat
Pound to even thickness if needed
Season with salt and pepper
Add oil or melted butter
Add optional seasonings or herbs
Place chicken on a baking sheet or in a baking dish
Roast for 18 to 22 minutes
Check internal temperature with a thermometer
Remove when it reaches 165°F
Rest for 5 to 10 minutes
Slice and serve
