Pat the turkey breast dry with paper towels
Rub all over with olive oil or melted butter
Season generously with salt
Add black pepper
Sprinkle garlic powder
Sprinkle onion powder
Add paprika
Add dried thyme
Add dried rosemary
Add dried sage
Add a little poultry seasoning
Add optional lemon zest
Add optional chopped fresh herbs
Season under the skin if possible
Let it rest after seasoning before cooking
