Approach the horse slowly
Hold an empty hand or select the saddle item
Right-click (or use the interact button) to mount the horse
Keep mounting repeatedly until hearts appear and the horse becomes tamed
If the horse bucks, remount and continue
Once tamed, mount and repeatedly right-click to confirm control
Equip a saddle to ride without dismounting
Use a lead on the tamed horse to keep it from wandering
