Wash the lemon thoroughly
Dry it well
Choose a zesting tool (microplane, fine grater, or vegetable peeler)
Zest only the outer yellow skin
Avoid the white pith underneath
Rotate the lemon as you zest to get all sides
If using a microplane or grater: press lightly and move the lemon across the teeth
If using a peeler: remove thin strips, then chop finely to remove excess pith
Collect the zest immediately in a bowl or on a cutting board
Use right away or store in an airtight container in the refrigerator up to 3 days
For longer storage, freeze zest (portion into small amounts) up to 3 months
