Rinse 2 cups of long-grain white rice until the water runs mostly clear
Heat 2 tablespoons of oil in a pot over medium heat
Add 1/2 cup of sofrito and cook for 1 to 2 minutes
Stir in 1 tablespoon of tomato sauce
Add 1 packet of sazón and 1 teaspoon of adobo seasoning
Add 1/4 cup of olives and 1 tablespoon of capers if desired
Add 3 cups of water or broth
Bring to a boil
Add the rinsed rice and stir once
Reduce heat to low and cover the pot
Cook for 20 to 25 minutes until the liquid is absorbed
Fluff the rice with a fork
Let it sit covered for 5 minutes before serving
