Wash the tomatoes thoroughly
Dry the tomatoes completely
Cut the tomatoes in half or into thick slices
Remove cores and excess seeds if desired
Sprinkle lightly with salt
Place tomatoes cut-side up on a clean drying rack, screen, or tray
Keep tomatoes in direct sunlight
Cover with fine mesh or cheesecloth to protect from insects
Bring tomatoes indoors at night
Return tomatoes to the sun each morning
Rotate or turn tomatoes daily for even drying
Continue drying until tomatoes are leathery and no longer moist
Store dried tomatoes in an airtight container
Refrigerate or freeze for longer storage
