Preheat the oven to 400°F (200°C)
Line a baking sheet or prepare a baking dish
Pound chicken breasts to even thickness
Season chicken with salt and pepper
Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with grated Parmesan
Dredge each chicken breast in flour
Dip chicken in beaten eggs
Coat chicken in breadcrumb-Parmesan mixture
Place coated chicken on the baking sheet or in the baking dish
Lightly spray or drizzle with oil
Bake for 20 to 25 minutes
Remove from oven and spoon marinara sauce over each piece
Top with mozzarella and extra Parmesan
Return to oven and bake for 5 to 10 minutes
Bake until chicken reaches 165°F (74°C) and cheese is melted
Let rest for a few minutes before serving
