How to Cook Raw Tuna?

Choose sushi-grade or very fresh tuna from a trusted source

Keep the tuna refrigerated until ready to cook

Pat the tuna dry with paper towels

Season lightly with salt and pepper

Heat a skillet or grill pan over high heat

Add a small amount of oil with a high smoke point

Sear the tuna for 30 to 60 seconds per side for rare

Sear the edges briefly if desired

Cook longer only if you want it more done

Remove the tuna from heat immediately

Let it rest for 1 to 2 minutes

Slice against the grain

Serve with your preferred sauce or sides
