Wash and peel the potatoes if desired
Cut potatoes into even-sized pieces if needed
Place potatoes in a pot and cover with cold water
Add salt to the water if desired
Bring the water to a boil
Reduce to a gentle boil
Cook until the potatoes are just starting to soften
Test with a knife; the outside should be tender but the center still firm
Drain the potatoes immediately
Cool them briefly if needed before using further
