Preheat the oven to 425°F
Pat the pork belly completely dry
Score the skin or fat in a crosshatch pattern
Rub with salt and any desired seasonings
Place the pork belly on a rack in a roasting pan
Roast for 30 minutes
Reduce the oven temperature to 325°F
Continue roasting until tender, about 1.5 to 2.5 hours
Baste occasionally with pan juices if desired
Increase the oven temperature to 450°F for the last 15 to 20 minutes to crisp the skin
Remove from the oven and rest for 10 to 15 minutes
Slice and serve
