Season pork chops with salt and pepper
Mix stuffing ingredients such as breadcrumbs, sautéed onions, garlic, herbs, cheese, and cooked vegetables
Spoon stuffing into each pork chop pocket
Secure openings with toothpicks if needed
Heat oil or butter in a skillet over medium-high heat
Sear pork chops on both sides until browned
Transfer pork chops to a baking dish
Add a little broth or water to the dish if desired
Bake until pork reaches 145°F internal temperature
Rest pork chops for a few minutes before serving
Remove toothpicks before serving
