Preheat the oven to 325°F
Pat the pork roast dry with paper towels
Trim excess fat if needed
Season all sides with salt, pepper, and any desired herbs or spices
Optional: rub with garlic, mustard, or oil
Place the roast in a roasting pan or oven-safe skillet
Optional: sear the roast in a hot pan until browned on all sides
Insert a meat thermometer into the thickest part of the roast
Roast in the oven until the internal temperature reaches 145°F
Remove from the oven and let rest for 10 to 15 minutes
Slice against the grain and serve
