Rinse 1 cup long-grain white rice until the water runs mostly clear
Heat 1 tablespoon oil in a saucepan over medium heat
Add 1 cup rice and toast for 1 to 2 minutes, stirring often
Add 2 cups water or broth
Add 1 teaspoon salt
Add 1 to 2 teaspoons minced chipotle pepper in adobo sauce
Add 1 tablespoon adobo sauce
Bring to a boil
Reduce heat to low and cover
Simmer for 15 to 18 minutes until the liquid is absorbed
Remove from heat and let sit covered for 5 minutes
Fluff with a fork
Stir in chopped cilantro and lime juice to taste
