Place a skillet on the stove over medium heat
Add a small amount of oil if needed
Add the Italian sausage links or patties to the skillet
Cook for 2 to 3 minutes per side until browned
Reduce heat to medium-low
Cover the skillet with a lid
Cook, turning occasionally, until the sausage reaches 160°F for pork or 165°F for poultry
Add a small splash of water if the pan gets too dry
Remove the sausage from the skillet
Let it rest for a few minutes before serving
