How to Cut Lemongrass?

Trim off the root end

Remove any dry or tough outer leaves

Cut off the top green stalks if not using them

Slice the stalk crosswise into thin rounds for cooking

Smash the stalk with the flat side of a knife before chopping for more flavor

Cut the tender lower part more finely if needed

Use only the pale, tender portion for most recipes

Discard the very fibrous outer layers if they are too tough
