Harvest oregano sprigs in the morning after the dew has dried
Rinse gently if needed and shake off excess water
Pat dry with a clean towel
Remove damaged or yellow leaves
Tie small bundles with string or use a drying rack
Hang upside down in a warm, dry, dark, well-ventilated place
Or spread leaves in a single layer on a tray or dehydrator rack
Use a dehydrator at 95°F to 115°F
Dry until leaves are crisp and crumble easily
Remove leaves from stems
Store in an airtight container away from heat, light, and moisture
