Wash herbs gently and pat completely dry
Remove damaged or yellow leaves
Strip leaves from thick stems if needed
Preheat oven to the lowest possible setting
Line a baking sheet with parchment paper
Spread herbs in a single layer on the sheet
Keep leaves from overlapping
Place the tray in the oven
Leave the oven door slightly open if possible
Check herbs frequently
Rotate the tray if needed for even drying
Remove herbs when they are dry and crumbly
Let herbs cool completely
Store in an airtight container
Keep containers in a cool, dark place
