Harvest thyme sprigs in the morning after the dew has dried
Rinse gently if needed, then pat completely dry
Remove any damaged or yellow leaves
Tie small bundles of thyme stems together
Hang the bundles upside down in a warm, dry, dark, well-ventilated place
Leave space between bundles for airflow
Check regularly until the leaves are crisp and brittle
Strip the dried leaves from the stems
Store the dried thyme in an airtight container
Keep the container in a cool, dark place
Alternatively, spread thyme in a single layer on a drying rack or tray
Turn the sprigs occasionally for even drying
Use a dehydrator on a low setting if preferred
Dry thyme in the oven on the lowest setting with the door slightly open if necessary
