Preheat the oven to 350°F
Grease a 9×13-inch baking dish
Cook and crumble 1 pound of breakfast sausage
Drain excess fat
Whisk 8 to 10 eggs in a large bowl
Add 1 to 2 cups milk
Season with salt and pepper
Stir in shredded cheese
Add cooked sausage
Add diced bread, hash browns, or vegetables if desired
Mix everything together
Pour the mixture into the baking dish
Spread evenly
Bake for 35 to 45 minutes
Check that the center is set
Let cool for a few minutes before serving
