Rinse the turnip greens thoroughly in cold water
Remove any tough stems and damaged leaves
Chop the greens into bite-sized pieces
Heat oil or butter in a large pan or pot
Add onion, garlic, or other seasonings if desired
Add the greens to the pan in batches if needed
Stir until the greens begin to wilt
Add a small amount of water, broth, or stock
Cover and cook over medium heat until tender
Season with salt, pepper, and optional vinegar or lemon juice
Serve hot
