Pat the steak dry with paper towels
Season both sides generously with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat a cast-iron skillet or grill over high heat
Add a small amount of oil to the pan if using a skillet
Place the steak on the hot surface
Sear for 3 to 5 minutes on the first side
Flip the steak and sear for 3 to 5 minutes on the other side
Sear the edges briefly if needed
Reduce heat to medium or move to indirect heat
Cook until the internal temperature reaches your desired doneness
Use a meat thermometer for accuracy
Rare: 125°F
Medium-rare: 130°F
Medium: 140°F
Medium-well: 150°F
Well-done: 160°F
Add butter, garlic, and herbs during the last minute if desired
Remove the steak from heat
Let it rest for 5 to 10 minutes
Slice against the grain and serve
