Pat the steak dry with paper towels
Season both sides generously with salt and pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat the oven to 400°F to 450°F
Heat a cast iron skillet over high heat until very hot
Add a small amount of high smoke point oil
Place the steak in the skillet
Sear without moving for 2 to 3 minutes
Flip and sear the other side for 2 to 3 minutes
Sear the edges if needed
Add butter, garlic, and herbs if desired
Spoon the melted butter over the steak
Transfer the skillet to the oven if the steak is thick
Cook until the desired internal temperature is reached
Remove the steak from the skillet
Rest the steak for 5 to 10 minutes
Slice against the grain and serve
