Rinse bok choy thoroughly and separate the leaves from the stems
Slice the stems into bite-size pieces and keep the leaves whole or roughly chopped
Heat a wok or skillet over medium-high heat
Add oil and swirl to coat the pan
Add aromatics like garlic, ginger, or scallions and stir briefly
Add the bok choy stems first and stir-fry for 1 to 2 minutes
Add the bok choy leaves and stir-fry until just wilted
Season with salt, soy sauce, or other desired stir-fry sauce
Toss everything together until evenly coated
Cook for another 30 seconds to 1 minute
Remove from heat and serve immediately
