Harvest basil stems in the morning after the dew has dried
Choose healthy, unblemished leaves and stems
Rinse gently if needed, then pat completely dry
Remove damaged or yellow leaves
Tie small bunches of stems together
Hang the bunches upside down in a warm, dry, dark, well-ventilated area
Keep bundles spaced apart for airflow
Leave until leaves are crisp and fully dry
Strip the dried leaves from the stems
Store dried basil in an airtight container
Keep the container in a cool, dark place
Alternatively, spread leaves in a single layer on a drying rack
Use a dehydrator on a low setting if preferred
Check regularly to prevent mold or over-drying
