Wash and dry zucchini
Slice zucchini into rounds or lengthwise spears
Toss with olive oil, salt, pepper, and garlic powder (optional)
Add Italian seasoning or paprika (optional)
Spread in a single layer on a baking sheet
Roast 18–25 minutes, flipping once, until browned and tender
Serve with lemon juice, grated Parmesan, or fresh herbs (optional)
