Preheat oven to 300°F (150°C)
Choose ribs: baby back or spare; remove the membrane from the bone side if desired
Pat ribs dry with paper towels
Season all over with salt and pepper
Add your rub (example: paprika, garlic powder, onion powder, brown sugar, chili powder, black pepper)
Optional: Wrap ribs tightly in foil for more tenderness
Place ribs on a baking sheet or in a roasting pan, bone-side down
Bake covered (foil) for 2.5 to 3.5 hours, until very tender
Optional: Make sauce or glaze (example: BBQ sauce mixed with a little brown sugar and vinegar)
Carefully remove ribs from oven
Brush with BBQ sauce/glaze
Return ribs (uncovered) to oven and bake 15 to 30 minutes to set and caramelize
Optional: Broil 2 to 5 minutes at the end for extra char (watch closely)
Rest ribs 10 minutes before slicing
Slice between the bones and serve
