How to Make Seared Scallops?

Pat the scallops very dry with paper towels

Remove the side muscle if present

Season lightly with salt and black pepper

Heat a skillet over medium-high to high heat

Add a thin layer of oil with a high smoke point

Wait until the oil is shimmering

Place scallops in the pan without crowding

Sear without moving them for 1.5 to 2 minutes

Flip scallops once the bottom is deeply golden

Cook the second side for 1 to 2 minutes

Add butter, garlic, or herbs if desired during the last 30 seconds

Remove scallops from the pan immediately

Serve right away
