Choose fresh tuna steaks or fillets
Pat the tuna dry with paper towels
Season with salt and pepper
Heat a skillet, grill, or pan over high heat
Add a small amount of oil if needed
Sear tuna for 1 to 2 minutes per side for rare
Cook longer if a more done center is desired
Remove from heat and let rest briefly
Slice against the grain if serving as steaks
Serve with desired sides or sauce
